I would say that it is not uncommong to have variations in name spellings. I have been researching the Bryant line and in one will have seen the children's names spelled as Bryan and Bryant (in the same document) and even Briant at times in the same document.
I believe the Nicholson came from a family surname. There were Nicholson's living in that area at that time. My Bryant ancestor received Nicholson as his middle name (the uncle of your Mourning Bryant by the way). Lydia Nicholson was my ancestor's maternal grandmother (married to Thomas Lewis) and Mourning's great-grandmother.
Your Mourning Bryant and Nicholson Rice were first cousins (Nicholson being the son of Mourning's aunt Elizabeth Bryant).
I am working vigorously on this line of Bryant's and would love to share notes if you wish.
